Nutrition for Thought: The Power of Quality Food
Did you know that you burn a lot of calories when you think? The brain, despite making up merely two percent of our body mass, is responsible for a whopping twenty percent of our energy expenditure. But that’s not the sole reason why we place such importance on high-quality nutrition. Of course, this is not the only reason why food is so important to us. After all, high-quality food has a direct effect on our overall well-being, shared meals strengthen our sense of togetherness, and good flavours make us feel good.
Head chef Marc Köhler is responsible for the culinary concept at the OBS. Before taking over our school canteen, he cooked in top-class restaurants (Hotel Palace Gstaad, Restaurant Schloss WĂĽlflingen, Witschi’s Restaurant), bringing this ambition with him to Wollerau. Marc is a father himself, and a healthy and balanced diet tailored to the needs of children and young people is his particular concern. When planning the menus, he pays as much attention to using healthy, high-quality ingredients as he does to ensure that the children enjoy the food.
PROMOTING BALANCED NUTRITION
To ensure a well-rounded dining experience, we provide a variety of meal options throughout the week. On two to three days, our main courses feature meat and fish selections, offering a change of pace, while vegetarian options are available on the remaining days. Moreover, we consistently offer vegetarian and vegan dishes as alternatives to meat or fish-based meals.
Our culinary approach centres on diversity, with a focus on incorporating organic and seasonal ingredients. Vegetables are skillfully integrated into our dishes, whether subtly hidden in sauces, soups, or casseroles, or presented as raw vegetable platters. In addition to nutritious offerings, our menu includes indulgent treats such as homemade pizza, hearty Kaiserschmarren, and classic pasta with tomato sauce. While we prepare Bircher muesli daily, we occasionally feature comfort foods like currywurst with chips.
We prepare over 550 meals daily, cutting more than 30kg of fruit and 20kg of bread.
We are commitment to offering a wide range of flavours and choices. We prioritise the use of organic and seasonal ingredients, and we incorporate vegetables into our sauces, soups, and casseroles. We also provide an abundance of fresh, raw vegetables to complement our menu.
Our menu is a delightful mix of options, featuring homemade pizza, tasty Kaiserschmarren, and classic pasta with tomato sauce. Whether you’re in the mood for a hearty Bircher muesli or a satisfying currywurst with chips, we have something to satisfy your taste buds.
